Some perseverance was required, yet we ultimately prevailed. Then again, a little courting can only be expected when sourcing wines from tiny cellars. And while you may have already had a go at Txakoli—that crisp and simply quaffable banner white from Spain’s Basque Country—Juanjo Tellaetxe (a man of the cloth, no less) gives this local varietal a higher calling with remarkable length, stony minerality and, yes, grace.
